Christmas time.
That time when you head home fully prepared to leave the sweet, sweet taste of speciality coffee behind for a couple of weeks of your Mum’s b+b standard, Costco bought, two kilo pre-ground strength 4 (whatever the fuck that means anyway) bag of muddy water.
But then you realise you work for a coffee roasting bunch of legends who fully prepare properly for these sorts of hardships.
Finca Santa Teresa (Panama), a farm that Extract Coffee Roasters have had the privilege of working with for several years now, produced a beautiful microlot of 100% Geisha (the bean varietal, think along the same route as wine grape varietals etc) they dubbed ZORRO.
Honey processed for extra sweetness; it was banging’.
Tasting notes of candied lemon, jasmine and molasses all the way. The V60 worked great for a lovely floral hit but being the sweet toothed bugger that I am I went all in Aeropress (13g - 200ml - 2min brew - 30sec plunge) for a fuller sweeter mouthfeel that really did make me feel that Santa had come early and right into my mouth…
…ahem…
Anyway, anything that comes out of FST is pretty damn stunning, and the ECR guys know what they’re doing when it comes to treating and roasting it with care. Both companies care a hell of a lot about what they do, and how they give back so check them out.
As the title suggests it was just a one-off Christmas special (sorry for the tease…) but keep an eye out on the ECR website for all current offerings and to watch out for any incoming FST lots.
